Pancakes are a hot commodity around here. We love ’em! We have two teams in our house when it comes to pancakes. The girls and the boys! The boys like blueberries in their pancakes and the girl like them on the side. Either way, pancakes and blueberries are a sweet weekend staple around here.
What I love most about these pancakes is that I can mix them right up in my Nutribullet, oh so easy and less mess. This recipe was inspired by my Banana Oatmeal Breakfast Muffin recipe, which can also be used to make delicious banana pancakes. 😉
When I started experimenting with these pancakes I initially was adding a 1/4 of cup of maple syrup or brown sugar as most pancake recipes call for sweetener. Well, that just seemed silly as we put syrup on the pancakes while eating them. Why do double duty??? Plus, I really wanted Grace to be able to eat them too and I didn’t want her to be eating any added sugar. She’s sweet enough. 💜
Ingredients
- 1 cup Old Fashioned Oats
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 egg
- 1 1/2 cup milk
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
Directions
Put all ingredients into your Nutribullet, or blender of choice, and blend until smooth. Warm your electric griddle to 325 degrees. It will be ready when you sprinkle a few drops of water on it and it sizzles.
Pour the batter into circular pancakes and cook until tiny bubbles form. Then flip and cook for 30 – 60 more seconds.
⭐ If you are on the boy’s team and would like to add blueberries to your pancakes, do it individually. I pour the pancakes then place 4-5 blueberries onto the batter as they cook. That way everyone doesn’t need to have blueberry pancakes and I think it keeps the blueberries more crisp. They pop in your mouth.
⭐ If I make these on the weekend, I save any extra in the freezer and then pop them in the toaster for a quick weekday breakfast.
