Yum Yum Yum! These delectable blueberry breakfast muffins are so dense yet moist they make any morning better with just one bite. They are not your typical bakery muffin. They are truly a breakfast muffin, dense, filling, and not too sweet. You don’t have to feel guilting eating one, or two with your morning coffee.
These healthy-ish whole wheat muffins are nice and easy to make. They only require 10 simple ingredients, all of which I had in my fridge or pantry without even planning ahead. Bonus! They are packed with blueberries (hello antioxidants) and use maple syrup as well as brown sugar as a sweetener. (If have tried any of my other breakfast recipes you might be seeing a sweetener theme…. I love the combination of sweet maple syrup topped with a little brown sugar.) The greek yogurt (full of protein) and old fashioned oats help you to stay full longer and help to create that perfect dense yet moist texture. Just writing this is making my mouth water. Let’s get to it!
Recipe
Makes 12 muffins. Prep time 35 minutes.
Ingredients
- 1 ½ cups whole-wheat flour
- 1 ½ teaspoons baking powder
- ¼ cup brown sugar
- 1 cup wholegrain old fashioned oats
- 1 teaspoon cinnamon
- ¼ cup pure maple syrup
- 2 free range eggs
- 1¼ cups plain greek yogurt
- 2 tablespoons melted butter
- 1 ½ cups frozen blueberries
Directions
- Preheat your oven to 350 degrees fahrenheit and spray or grease a 12-count muffin pan.
- In a large bowl, mix the dry ingredients. In a second smaller bowl lightly beat the two eggs, then stir in the yogurt, butter, and maple syrup.
- Add the wet ingredients to the dry. Then gently fold in the frozen blueberries. Stir until just combined. DO NOT OVER MIX.
- Evenly spoon the mixture into the prepared muffin pan. Sprinkle the top of the muffins with oats (just for looks). Then bake for 25-27 minutes; until they are nice and golden on top. Allow the muffins to cool in the pan for 5 minutes before removing.

The muffins may be stored in an air tight container for up to 5 days. Although they are best fresh. If you like these muffins, you may also like my Amish Oatmeal Bake. Both are delicious and nutritious.
