The best way to start your day is with a healthy satisfying breakfast to get the energy you need to have a successful day. These deliciously smooth banana muffins are a healthy alternative to sugary, carb laden muffins we all love to devour. They are made with no flour or oil. Wow, how can that be you ask… Oats and Greek Yogurt. Two of my favorite ingredients!
What’s even better is that they are sooooo incredibly easy to make. You literally throw the ingredients into your NutriBullet (or blender) and bake.I prefer to only blend 1 cup of the old fashioned oats and then mix the second cup in by hand. This gives the banana smooth muffins a slightly heartier texture. The hardest part is waiting for them to bake up golden brown and then cool so you can eat them.
These muffins are mom baked, kid approved!

Recipe
Makes 12 muffins. Prep time 5-8 minutes. Cook time 15-20 minutes.
Ingredients
- 1 cup plain Greek yogurt
- 2 medium ripe bananas (1 cup mashed)
- 2 large eggs
- 2 cups old fashioned oats
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup chocolate chips ~ I prefer mini chips
Directions
- Preheat oven to 400 degrees. Spray your muffin pan with cooking spray.
- Add all the ingredients except for 1 cup of the oats and the chocolate chips to a blender (NutriBullet) or food processor and process on high until the oats are broken down and batter is smooth and creamy. Stir in the second cup of oats and chocolate chips by hand.
- Pour batter into your prepared muffin tin filling each section about 3/4 full. Optional: sprinkle some oats and a few chocolate chips over the top of each muffin.
- Bake for 15-20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing.
⭐⭐Muffins store in an air-tight container for up to a week on the counter and up to three months on the freezer.
⭐⭐If you plan on taking these muffins on the go, as I often do, I would omit the extra chocolate chips on the top as they make for very messy little fingers and faces.
